Pumpkin Rice Krispie Treats

The basic season of pumpkin is quite unavoidable, and there’s a lot of times where I’ll laugh at how far we take it. I mean, I just saw pumpkin pasta sauce today. SO…. why don’t we just take it for what it is and whip up a fun and easy treat?! These will bring you back to your childhood and times spent in the kitchen reading the back of the Rice Krispie box to get the ooey gooey recipe.

Pumpkin Rice Krispie Treats

Vegan, Low FODMAP, Gluten Free, Dairy Free, No Bake


2 cups puffed brown rice or any rice cereal (I use One Degree Organics) 
1/2 cup nut butter (I used almond, but peanut will just have a stronger taste) 
3 tbsp pumpkin purée 
1 tsp cinnamon 
2 tsp pumpkin pie spice 
1 tsp vanilla extract 
2 tbsp natural maple syrup 
2 tbsp chia or flax seeds for an extra fiber kick (optional)

Combine all ingredients, then form into balls or spread flat in a pan. Cover with dairy free chocolate chips of your choice! I use Pascha chocolate chips, which are just 100% cacao, but if you want something sweeter, then Enjoy Life has some great ones! Then, refrigerate or freeze and cut into chunks!
